  • cup cottage cheese approx. 5.3 oz / 150g
  • 1.5 cups blanched almond flour approx. 5.3 oz / 150g
  • 1 teaspoon olive oil
  • 2 teaspoon baking powder
  • ½ teaspoon salt preferably high-quality mineral salt
  • 1 teaspoon garlic powder or your favorite herbs like oregano or dried dill

Optional topping:

  • sunflower seeds sesame seeds, or nigella seeds (black cumin)

  • Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.
  • Blend wet ingredients: Place the cottage cheese and olive oil in a tall blending cup or bowl. Use an immersion blender to blend the mixture until completely smooth and creamy.

  • Add the almond flour, baking powder, salt, and garlic powder to the blended cheese mixture.

  • Pulse briefly with the blender to combine, then switch to a spoon and mix well by hand. The dough should be quite thick. (Note: Sometimes the dough thickens even more after a few minutes as the almond flour absorbs moisture).
  • Wet your hands with a little water to prevent sticking. Divide the dough and form 4 to 5 round rolls, gently flattening the tops. Place them on the prepared baking sheet.
  • Sprinkle the tops of the rolls with sunflower seeds, sesame seeds, or your favorite low-carb seeds.
  • Bake for about 25 minutes, or until the rolls are beautifully golden brown on the outside and cooked through.

  • Let them cool slightly before slicing. Serve warm with good quality butter, avocado, or your favorite keto-friendly toppings! Enjoy.

Uwagi

  • Variations: Feel free to customize the flavor by adding dried herbs to the dough, such as marjoram, dried dill, cumin, turmeric, or paprika. Sun-dried tomatoes also make a great addition!
  • Flour tip: If you don't have store-bought almond flour, you can easily make your own by blending sliced almonds in a high-speed blender or food processor until they reach a fine, flour-like consistency.
  • Storage: Keep the leftover rolls in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or toaster before serving.
