Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.
Blend wet ingredients: Place the cottage cheese and olive oil in a tall blending cup or bowl. Use an immersion blender to blend the mixture until completely smooth and creamy.

Add the almond flour, baking powder, salt, and garlic powder to the blended cheese mixture.
Pulse briefly with the blender to combine, then switch to a spoon and mix well by hand. The dough should be quite thick. (Note: Sometimes the dough thickens even more after a few minutes as the almond flour absorbs moisture).
Wet your hands with a little water to prevent sticking. Divide the dough and form 4 to 5 round rolls, gently flattening the tops. Place them on the prepared baking sheet.
Sprinkle the tops of the rolls with sunflower seeds, sesame seeds, or your favorite low-carb seeds.
Bake for about 25 minutes, or until the rolls are beautifully golden brown on the outside and cooked through.
